Coconut Cake

This recipe was my "mess up" cake.  I started to make cookies from the cake mix and didn't pay attention to the ingredients.  In the end, I made the cake batter.  So, after my kids went to bed I created this recipe that was a hit with my co-workers.


1 yellow cake mix (ingredients noted on box)  
1can of sweetened condensed milk  
1 tub of Cool Whip  
coconut extract

Make cake batter as directed on box, add 3 tsp. coconut extract to batter, stir well.  Bake as directed on box. While hot, poke holes into cake with fork.   The more the merrier!!  Mix 1 tsp. coconut extract into condensed milk.  Drizzle and spread into holes over top of hot cake.  Let cool completely in refrigerator.  Frost with Cool Whip and sprinkle with coconut.  Serve and enjoy!!  Store in refrigerator.
