4 Ingredient Peanut Butter Cookies {gluten free}



I'm a huge fan of peanut butter.  Peanut butter cookies, pie, ice cream, candy, etc...  Even straight out of the jar.  When I found this recipe I have to admit that I was skeptical.  Only 4 ingredients (5 with chocolate chips)?  And no flour?  No way!!  Ohhhhhhh YES!!  These easy treats are my new favorite peanut butter cookie recipe.  And my gluten-free-eating hubby can even enjoy them.    


Makes about 20 cookies

Ingredients:
1 cup peanut butter
1 cup sugar (+ extra sugar for sprinkling)
1 egg
1 teaspoon vanilla extract
**can add 1 c. choc. chips if desired, I couldn't resist

1.  Mix all the ingredients together in a medium bowl.

2.  Roll dough into 1" balls and place on a parchment paper lined cookie sheet.

3.  Use the tines of a fork to press the cookie flat and create the criss-cross pattern.  Sprinkle with extra sugar.

4.  Bake at 350 for 10-12 minutes, until the edges become golden brown.

Blooming Oreo Dessert



My dear grandma passed away 2 years ago.  Not a day goes by that I don't think about her.  This was one of her recipes that she always made for family gatherings.  She was an amazing cook and wonderful person.  I only hope to be half the person that she was.  I have included her 9x13"pan version and my fun potted version for you to enjoy.

9x13" pan version:
1 pkg Oreo cookies, crushed      
1/2 c. butter, melted      
1 pkg. instant vanilla pudding
2 c. milk
8 oz. cream cheese, softened      
1 c. powdered sugar
1 carton Cool Whip

Mix Oreos and butter.  Press all but 1/2 cup into bottom of 9x13” pan with fork to form crust.  Combine cream cheese, powdered sugar, and ½ of Cool Whip, pour into pan over Oreo crust.  Combine pudding and milk, pour over cheese mixture.  Refrigerate for 15 minutes.  Cover with remaining Cool Whip.  Sprinkle with remaining crushed Oreos.  Refrigerate until served.

9 flower pots version:
Mix ingredients as noted above in pan version, leaving out the butter.  Layer into plastic pots evenly in this order - Oreos, cream cheese mixture, Cool Whip, pudding, more Cool Whip, Oreos.  Top with fake flowers for decoration.

Cinnamon Roll Crescents


These are a quick and easy breakfast treat that my kids love.  They ask for them all the time.  With only a few ingredients, they are the perfect way to start your morning when you don't have a lot of time.  Or you have super hungry kids begging you for something tasty.

Ingredients:
1 pkg. crescent rolls
1/3 c. sugar
1/2 tsp. cinnamon

Glaze:
1/2 c. powdered sugar
1 Tbsp. milk
1/4 tsp. vanilla

1.  Mix cinnamon and sugar together in a small bowl.
2.  Unroll crescents and spoon one Tbsp. of mixture on top.  Roll up from wide end to small end.  Sprinkle with more cinnamon and sugar mixture.
3.  Place on parchment paper lined (or lightly greased) cookie sheet.  Bake at 375 degrees for 12 minutes.
4.  Mix together glaze ingredients and drizzle on top of crescents.
